Vegetable Medley Pasta
Ingredients:
1 (16 ounce) Package Whole Wheat Spaghetti 3 T Olive Oil 2 T Garlic (minced) 3 Tomatoes (diced) 1 Red Onion (chopped) 1 Yellow Pepper (chopped) 1 Red Pepper (chopped) 1 cup Zucchini (chopped) 1/2 cup Mushrooms (sliced) 2 T Balsamic Vinegar 2 T Feta Cheese Salt and Pepper (to taste)
Bring a large pot of lightly salted water to a boil and cook pasta for 8 to 10 minutes or until al dente.Heat olive oil in a skillet over medium heat, and saute the garlic until lightly browned. Mix in the tomatoes, onion, yellow bell pepper, red bell pepper, zucchini, and mushrooms. Cook and stir until tender. Mix the balsamic vinegar into the skillet. Toss with the cooked spaghetti, sprinkle with feta cheese, and serve.
