Healthy Tomato Garlic Pasta
Ingredients:
1 (8 ounce) Package Whole Wheat Angel Hair Pasta 2 lbs. Tomatoes 4 Garlic Cloves (chopped) 1 T Olive Oil 1 T Fresh Basil (chopped) 1 T Tomato Paste 1/8 tsp. Salt 1/4 tsp. Pepper 1/4 cup Parmesan Cheese
Cook the pasta in a large pot of boiling water until al dente. Saute the garlic in a skillet with olive oil for 2-3 minutes. Stir in the tomato paste, tomatoes, and salt and pepper. Reduce heat, and simmer until sauce thickens slightly, then add the basil. Drain the pasta and then mix into the sauce. Sprinkle with fresh Parmesan cheese and serve.
