Healthy Thai Chicken Salad
Ingredients: 3 cup Romaine Lettuce (chopped) 1/4 cup Organic Peanut Butter 2 cups Cooked Chicken Breast (cubed) 2 T Low Sodium Soy Sauce 1 tsp. Fresh Ginger (minced) 3 T Rice Wine Vinegar 2 cups Shredded Cole Slaw Mix 2 Tomatoes (chopped) 1 Lime (juiced) Black Pepper (to taste)
Combine peanut butter, soy sauce, 1 T rice wine vinegar, lime juice and ginger in a medium bowl and stir in chopped chicken breast. Add romaine lettuce, remaining rice wine vinegar, and coleslaw. Mix everything together thoroughly then top with chopped tomatoes. Serves 4.
