It brings out a rich, caramelized flavor that doesn’t require a lot of extra ingredients. In fact, this roasted carrots recipe has only 5 ingredients yet it packs a ton of flavor. All you need is some fresh carrots, salt and pepper, olive oil, and parsley.

Carrots have a lot of health benefits too. They’re high in antioxidants like lycopene and xanthophylls, which can help protect your body against damage from free radicals.

Ingredients: Roasted Carrots Recipe

  • 4 large carrots
  • 1/4 tsp. salt
  • 1/8 cup fresh parsley (or 2 T dried)
  • 2 T olive oil
  • Black pepper (to taste)

 

Instructions

1. Rinse the carrots thoroughly and cut off the ends. You can also peel them if you’d like.

2. Cut the carrots into sticks that are a quarter inch thick and three inches long. Make sure all the carrots are cut the same size.

3. Pre-heat oven to 400 degrees Fahrenheit. Add carrots to a roasting pan with olive oil, salt, parsley, and black pepper. Mix all ingredients around thoroughly and then cook for 20 minutes.
