Roasted Carrots Recipe

Roasted Carrots RecipeThis is one of the easiest roasted carrot recipes you’ll find anywhere. Roasting is one of my favorite ways to cook carrots. It brings out a rich, caramelized flavor that doesn’t require a lot of extra ingredients. In fact, this roasted carrots recipe has only 5 ingredients yet it packs a ton of flavor. All you need is some fresh carrots, salt and pepper, olive oil, and parsley.

Carrots have a lot of health benefits too. They’re high in antioxidants like lycopene and xanthophylls, which can help protect your body against damage from free radicals.

This recipe weighs in at 185 calories. It has healthy monounsaturated fats from the olive oil, 5 grams of fiber, and is low in sodium. Check it out … and let me know what you think!
