Linguini Broccoli Pasta with Red Peppers

Ingredients:

1 lb. Whole Wheat Linguini

1 lb. Broccoli (chopped)

3 T Olive Oil

1 T Butter

3 Garlic Cloves (minced)

1 Red Pepper (thinly sliced)

1/8 tsp. Salt

1/4 cup Parmesan Cheese


Bring a large pot of water to a boil. Add linguini and cook for 8 to 10 minutes and drain.Steam broccoli with 2 tablespoons water in microwave for 6-7 minutes or in a steamer.

Heat olive oil and butter over low heat in a skill and stir in garlic and red pepper slices. Cook for 3-4 minutes.Drain broccoli and add to skillet. Sprinkle with salt and saute broccoli and peppers until soft. Toss vegetable mixture with hot pasta and top with Parmesan cheese.


Serves 6.
