How to Make Healthy Potato Chips

Healthy potato chips??! I must be crazy, right? Yes and no. Potatoes have quite the reputation for being a terrible, terrible food for your health. There is a hint of truth to this. Potatoes are full of starchy carbohydrates that are hard to burn off if you’re not an active exerciser. They’re one of the most common foods that lead to weight gain according to a Harvard study (see the link above). Problem is, most peeps eat their potatoes in unhealthy forms like French fries, loaded baked potatoes, potato chips, and fried, greasy breakfast potatoes.

But here’s something you may not realize about the much-aligned spud: on its own, it’s not so bad. Here’s what the nutrition facts look like for the average medium-sized Russet potato (the type used in most baked potato recipes):

160 calories and 4 grams of fiber is pretty solid. Unfortunately, 99 percent of potato chips are loaded with oil, salt, and preservatives, which adds a lot of calories, fat, and other icky stuff.

So why not make your own instead? My homemade healthy potato chips recipe is ridiculously easy. It consists of 5 steps and shouldn’t take more than 30 minutes of your time.

1. Rinse potatoes. Keep skin on.

2. Slice as thin as possible (or use a mandoline slicer if you have one, which is much easier).

3. Coat potato slices with 1 T olive oil.

4. Sprinkle with 1/4 tsp. (or less) of salt, black pepper, and a little dried rosemary and thyme.

5. Bake at 425 degrees Fahrenheit for 20 minutes.

That’s it. Not too tough, right? This healthy potato chips recipe serves two people and will only set you back 120 calories and 6.5 grams of fat. Here’s the final product:
