You don’t normally see the words “healthy” and “chocolate chip cookies” in the same sentence. Cookies that aren’t loaded with butter and sugar are pretty rare. In this recipe, a few easy substitutions cuts down on the amount of sugar, fat, and calories. I subbed most of the white flour for whole wheat flour, so you also get some healthier carbs.

Ingredients
- 3/4 Cup White Whole Wheat Pastry Flour
- 1/4 Cup White Flour
- 1 Cup Oats
- 1/2 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 2 oz. Tofu
- 1/4 Cup Butter with Olive Oil
- 1/4 Cup Sugar
- 1/4 Cup Brown Sugar
- 5 Packets Splenda or Truvia
- 1/8 Cup Applesauce
- 4 oz. Chocolate Chips
- 2 T Flax Seeds
- 1/4 tsp. Salt
- 1 tsp. Vanilla
Instructions
Heat oven to 375 and grind up oats in a food processor or blender until you have a fine powder consistency. Mix together with whole wheat flour, white flour, baking soda and baking powder. In a separate bowl, mix butter and tofu and beat until desired consistency. Mix all sugar into bowl along with apple sauce and vanilla and beat again until consistent texture. Stir in flour mixture, flax seeds, salt, and chocolate chips and mix well. Spread into small balls onto a baking sheet (coated with olive or canola oil spray) and bake for about 10 minutes, or to desired level of brown.
Makes about 30 cookies.
