Gluten Free Pizza Recipe

gluten free pizza recipeAs much as I love my go-to chicken pizza recipe, my wife’s gluten intolerance has forced me to explore other options. While shopping at Whole Foods, I noticed they sell a gluten free pizza crust made by a company called Udi’s.

While the ingredients list for Udi’s is not ideal by my standards (WATER, TAPIOCA STARCH, BROWN RICE FLOUR, NON-GMO CANOLA OIL, EGG WHITES, EVAPORATED CANE SUGAR, TAPIOCA SYRUP, TAPIOCA MALTODEXTRIN, SALT, XANTHAN GUM, YEAST, CULTURED CORN SYRUP SOLIDS (NATURAL MOLD INHIBITOR), ENZYMES), that’s pretty much what you get when buying gluten free pizza crust substitutes.

The good news is this pizza is ridiculously easy to make and it’s pretty healthy. I used the following pre-made ingredients:

Add some cheese into the mix (a combination of mozzarella and parmesan) and you’re good to go. You just bake it for 10-12 minutes at 400 degrees and you’re done. You get a delicious, gluten free pizza that has only 385 calories (for half a pizza, which is pretty filling). Not too shabby. Check it out and let me know what you think.
