Healthy Chicken Chili
Ingredients: 1 T Extra Virgin Olive Oil 4 - 4 oz. Chicken Breasts (cubed) 1 cup Onion (diced) 3 15-oz cans Cannelloni Beans (drained and rinsed) 3 cups Low Sodium Chicken Broth 1 4-oz can Green Chilies 1 tsp. Cumin 1/2 tsp. Chili Powder 1/2 tsp. Garlic Powder 1/4 tsp. Red Pepper Flakes 1/4 tsp. Black Pepper 1/4 tsp. Salt
Heat oil in a stir fry pan over and cook chicken and onion over medium-high heat for about 6 minutes per side, or until chicken is cooked through. Mash one of the cans of beans then stir in all beans, broth, chilies and seasoning. Bring to a boil, lower heat and simmer 30-40 minutes, stirring often. Serves 10.
