Healthy Chicken and Asparagus
Ingredients: 2 - 4 oz. Chicken Breasts (cubed) 1/2 cup Low Sodium Chicken Broth 1/2 cup Fat Free Greek Yogurt 15 stalks Fresh Asparagus (w/ ends trimmed off) 2 cloves Garlic (minced) 2 T Red Wine Vinegar 1 Red Pepper (diced) 1 T Balsamic Vinegar 1 oz. Parmesan Reggiano Cheese 1 tsp. Sesame Seeds Cooking Spray 1/4 tsp. Black Pepper 1/4 tsp. Sea Salt
Heat oil in a stir fry pan over and cook chicken over medium heat for about 6 minutes per side, or until chicken is cooked through and no longer red in center. Heat chicken broth in skillet over medium high heat and add asparagus, red pepper, garlic, yogurt, and red wine vinegar. Cook for 10 minutes. Place chicken on top of vegetables, top with balsamic vinegar, salt pepper, sesame seeds, and parmesan cheese and cook for 3-5 more minutes then serve. Serves 2.
