Egg, Ham, Cheese, and Tomato Breakfast Melt
Ingredients: 2 eggs 3 Slices Low Sodium Ham or Turkey (divided into 2 equal portions) 1 Small Tomato (sliced into 4 pieces) 1 Slice Reduced Fat Cheddar Cheese (split in half) Black Pepper (to taste) 2 Pieces Whole Wheat Toast (or mini whole wheat bagel cut in half)
Spray a small pan with cooking spray and cook the eggs until they're cooked to your liking. Remove the yolks. Toast bread and top each piece with egg white, tomato, ham, and cheese. Place 1-2 inches from broiler for 2 minutes or until cheese is melted. Sprinkle with black pepper and serve Serves 1.
