Healthy Breaded Chicken w/ Marinara Sauce

Breaded Chicken

Ingredients:

1 pound Boneless, Skinless Chicken Breasts (4 - 4oz. breasts)

1 Egg White (beaten)

1/2 cup Whole Wheat Bread Crumbs

1 1/2 cups Marinara Sauce

1/4 cup Reduced Fat Shredded Mozzarella Cheese

1 T Parmesan Cheese

1 T Fresh Parsley (chopped)

1 T Fresh Basil (chopped)

1 T Oregano

1 T Olive Oil


Dip chicken breasts in egg white and then cover with bread crumbs. Heat olive oil in large skillet and cook chicken over medium heat until lightly browned on both sides (about 2-3 minutes/side). Turn down heat to low and add marinara sauce. Simmer for 8-10 minutes then add the cheeses, parsley, basil, and oregano on top of chicken and cook until cheese is melted.

Serves 4.
