Healthy Balsamic Roasted Chicken

Balsamic Chicken

Ingredients:

1 Whole Roasting Chicken (around 3-4 lbs.)

2 T Rosemary

1 tsp. Garlic

1 T Olive Oil

1/4 Cup Balsamic Vinegar

1/2 tsp. Brown Sugar

Fresh Ground Black Pepper (to taste)


Preheat oven to 350.Remove the chicken skin and rinse the chicken with cold running water and pat dry. Mince the rosemary and garlic and rub outside of chicken with olive oil and then rosemary and garlic. Sprinkle with black pepper. Put 2 rosemary sprigs into the cavity of the chicken. Place the chicken into a roasting pan and roast for around 20 minutes per pound, or until internal temperature reaches 180 F. Baste frequently with pan juices. Combine the balsamic vinegar and brown sugar in a saucepan and cook over low heat until warmed. Top the chicken with the vinegar and brown sugar sauce and serve.
