Healthy Asian Lettuce Wraps
Ingredients: 2 T Olive Oil 2 Garlic Cloves (minced) 2 Green Onions (minced) 1 lb. Ground Chicken or Turkey Breast 2 T Lime Juice 2 tsp. Fresh Ginger (finely chopped) 1 tsp. Cumin 2 T Peanuts (crushed) 2 T Rice Wine Vinegar 1 tsp. Soy Sauce 2 T Hoisin Sauce Dash of Salt & Pepper Romaine Lettuce
Combine onions, garlic, and olive oil and cook over medium heat under tender (about 5 minutes). Set aside. Cook ground chicken or turkey breast in large pan under no longer pink. Add 1 tsp. ginger, lime juice, cumin, crushed peanuts, onions, garlic, salt and pepper and cook over low heat for additional couple minutes. For sauce, combine 1 tsp. ginger, soy sauce, rice wine vinegar, and hoisin sauce. Scoop chicken mixture into lettuce wraps and top with sauce. Serves 4.
